Shoot for a variety of taste and texture, including hard cheeses like aged parmesan, semi-firm cheeses like a mild cheddar cheese or sharp white cheddar, semi-soft cheeses like muenster, soft cheeses like brie or and a blue-veined cheese like gorgonzola.
