We’ve been crafting old-world, European-style cheeses in Wisconsin since before we were even a state. Immigrants from across Europe settled in Wisconsin with little more than their recipes for making great cheese. Lucky for us, they chose Wisconsin because the soil and glacial-fed waters reminded them of home. Maybe because they were Americans now, they started experimenting with the old recipes to create something entirely new. Our state motto is simply “Forward.” We suggest you go forward and try as many of these European-inspired creations as you can. Live without regrets, people!
