Lil' Will's Big Cheese | Wisconsin Cheese

The rind of this raw-milk Alpine-style cheese is washed in a solution containing microbes from the soil of the cheesemaker's own farm in southern Wisconsin's Driftless region. The cheese is cave-aged for 12 months and has an earthy flavor.
