Cousins Fermo Jaeckle and Felix Roth, founders of Roth Käse and cousins descended from a Swiss cheesemaker, heard the siren call of gruyere - its funk, its flavor of Alpine meadows, and fresh milk transformed by copper vats and time. Such was their fervor for this ancestral cheese and the high-quality milk from the surrounding dairy farms that they set up shop in Monroe, Wisconsin, and dubbed their cheese Grand Cru.

How to Pair Grand Cru Reserve

A warm baguette lets this cheese show off the beauty and flavor that comes from being made in copper vats, while elk cacciatore salami draws out its savory, meaty notes. Onion jam and chocolate-covered cherries play up its latent fruity notes, while a Sunchip lends some savory informality to the scene. Beverages that favor this partnership include a Jura white wine, Kolsch, or the distinct apple flavor of Calvados.
