MADISON, Wis. – Wisconsin Milk Marketing Board's (WMMB) Cheesecyclopedia® online self-study course has been officially approved by the American Culinary Federation (ACF), enabling foodservice professionals who complete the program to earn two continuing education hours (CEHs). To maintain ACF certification, foodservice professionals are required to complete 80 CEHs during their five-year certification period.
The Cheesecyclopedia course covers the wide variety of cheeses produced in Wisconsin and provides practical information about how to profit from investment in these cheeses. By completing the course, ACF professionals will learn about the cycle of cheese from pasture to plate, how to identify cheese categories and proper cheese storage and handling practices. The course also covers how common denominators within cheese categories affect cold and hot performance and how cheese knowledge can be utilized for profitable menuing and merchandising.
