Madison, Wis. – World Dairy Expo attendees will have the opportunity to meet Wisconsin Master Cheesemakers in the Wisconsin Milk Marketing Board (WMMB) booths (E6304-6307) in the Exhibition Hall of the Alliant Energy Center.
Wisconsin began and continues to advance the country's highest cheesemaking standards and has more licensed cheesemakers than any other state. The quest for excellence continues with the Wisconsin Master Cheesemaker® program. It's the most ambitious and rigorous advanced training program in the country and the only Master program outside of Europe.
The Master Cheesemaker® program is administered by the Center for Dairy Research located on the University of Wisconsin campus in Madison, and is funded by Wisconsin dairy farmers represented by WMMB.
Learn more about this intense cheesemaking program from certified Master Cheesemakers and sample their cheeses from 11 a.m. to 2 p.m. in the WMMB booths.
Wednesday, September 30 – Master Cheesemakers from Nasonville Dairy, Marshfield, will be showcasing their products. Ken Heiman or Tom Torkelson will showcase cheeses made at Nasonville. Heiman is a Master Cheesemaker in asiago, cheddar, feta and monterey jack. Torkelson earned his Master Cheesemaker certifications in muenster and brick.
Thursday, October 1 – Meet Master Cheesemaker Brian Jackson of Foremost Farms USA, Marshfield. Jackson is a certified Master Cheesemaker in monterey jack, cheddar, brick and colby.
Friday, October 2 – Sample cheeses made by Tom Jenny of Carr Valley Cheese, LaValle. Jenny is a Master in swiss, fontina and gouda.
Saturday, October 3 – Bruce Workman of Edelweiss Creamery, Monticello holds the most Master certifications of any licensed cheesemaker in the state. Workman has earned Masters for gruyere, baby swiss, brick, butterkase, havarti, raclette, emmental, specialty swiss, muenster, cheddar and gouda.
