10-Minute Nacho Cheese Sauce

"Lord have mercy on my diet, because this was some of the best dip I've ever had the pleasure of gracing my mouth with. It was creamy and went on my chips perfectly. I could've eaten the entire thing by myself, but just had to share it! It's so good makes ya wanna slap ya momma." - SaraCat

Cheese

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Cheddar, Colby, Aged Cheddar or Young Cheddar can be used in this recipe.

Instructions

  1. Melt butter in a large saucepan over medium-low heat. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in cream, milk, garlic powder, onion powder and paprika. Bring to a boil; cook and whisk for 2 minutes or until thickened. Reduce heat to low; gradually stir in cheddar and colby until melted.
  2. Remove from the heat. Stir in green chilies. Season with salt and pepper to taste. Add milk, 1 tablespoon at a time, until desired consistency. Serve immediately with tortilla chips.

Cheesemonger Tip

Select for cheesemonger info

Do you have questions when shopping for cheese? Ask the cheesemonger! A cheesemonger specializes in the buying and selling of high-quality cheese, usually available in the specialty section of a grocery store or cheese shop. Knowledgeable and passionate, a cheesemonger is a go-to resource for cheese varieties and pairings, proper cheese storage and handling, its cooking applications and cheese brand information.

Colby cheese is a Wisconsin original. The cheese is softer and moister than cheddar and has a more open texture with a mild, cheddar-like flavor.
