Homemade Colby and Cheddar Nacho Cheese Dip

Ingredients

Cheese

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Aged Cheddar, Colby or Young Cheddar can be used in this recipe.

Instructions

  1. Melt butter in a large saucepan over medium-low heat. Whisk in flour until light brown. Gradually whisk in the cream, milk, garlic powder, onion powder and paprika. Bring to a boil, whisking constantly. Cook and whisk for 2 minutes or until thickened.
  2. Reduce heat to low. Gradually whisk in cheddar and colby until melted.
  3. Remove from the heat. Stir in green chiles. Season with salt and pepper to taste. Add milk, a tablespoon at a time, until desired consistency. Serve with tortilla chips.
