Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Bread Cheese (Juustoleipa) can be used in this recipe.

Instructions

Chipotle Cream:

  1. Combine the sour cream, chipotle peppers and salt in a small bowl.

Tacos:

  1. Cook the sausage, onion, and poblano pepper in a large skillet over medium-high heat for 8-10 minutes or until meat is no longer pink. Remove sausage mixture to paper towels to drain.
  2. Meanwhile, warm juustoleipa in a large, nonstick skillet over medium heat; cook for 2-3 minutes on each side or until warmed through. Transfer juustoleipa to a cutting board; cut into strips.
  3. Top tortillas with chorizo mixture and juustoleipa. Dollop with chipotle cream. Serve with cilantro, lime wedges and radishes.
