Wisconsin Cheese Ricotta Fudge Ribbon Cake Recipe

Ingredients

Chocolate Cake:

1 box chocolate or devil's food cake mix (regular size)

Ricotta Ribbon Layer:

1 cup whole milk Frigo® Ricotta cheese (8 ounces)
1/4 cup sugar
1 large egg
2 tablespoons milk
1 tablespoon cornstarch
1/2 teaspoon vanilla extract

Glaze:

1 cup (6 ounces) semisweet chocolate chips
4 tablespoons butter, cubed
2 tablespoons light corn syrup

Cheese

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Ricotta can be used in this recipe.

Instructions

Chocolate Cake:

Heat oven and prepare cake mix according to package directions.
Pour half of the cake batter into a greased and floured 10-inch (about 12 cups) fluted tube pan.

Ricotta Ribbon Layer:

Beat the ricotta, sugar, egg, milk, cornstarch and vanilla in a bowl until smooth and creamy. Carefully spread ricotta mixture evenly over cake batter, taking care not to overmix. Gently top with remaining cake batter.
Bake according to package directions for Bundt cake or until a toothpick inserted near the center comes out clean. Cool for 30 minutes in pan before removing to a wire rack to cool completely.

Glaze:

Combine glaze ingredients in a small saucepan over low heat, stirring constantly, until chocolate is melted. Cool slightly. Spoon over cake.
