Tequila-Lime Watermelon Salad with Queso Fresco

Bring this summery fruit salad to your next fiesta. The creamy queso fresco cools the spicy heat from the jalapenos; and the tequila-lime dressing is refreshing.

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Queso Fresco can be used in this recipe.

Instructions

Tequila-Lime Dressing:

  1. Bring sugar and water to a boil in a small saucepan, stirring constantly. Cook and stir for 3-5 minutes or until mixture is slightly thickened. Remove from the heat.
  2. Combine the lime juice, tequila and 1/3 cup simple syrup in a bowl. Add additional simple syrup, a tablespoon at a time, until desired sweetness. Save any leftover simple syrup for different dish. 

Watermelon Fruit Salad:

  1. Combine red onion and lime juice in a small bowl. Season with salt to taste; toss to coat. Let stand for 15 minutes.
  2. Meanwhile, combine the mangoes, watermelon, pineapple, honeydew, cilantro and jalapenos in a large bowl. Drain onion mixture; discard lime juice. Add onion to salad. Pour a 1/2 cup dressing over salad; toss to coat. Drizzle with additional dressing as desired. Save any leftover dressing for different dish. Add queso fresco; toss gently. Let stand 15 minutes before serving.
