Tequila-Lime Watermelon Salad with Queso Fresco

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Queso Fresco can be used in this recipe.

Instructions

Tequila-Lime Dressing:

  1. Bring sugar and water to a boil in a small saucepan, stirring constantly. Cook and stir for 3-5 minutes or until syrup is slightly thickened. Remove from the heat.
  2. Combine the lime juice, tequila and 1/3 cup syrup in a bowl. Add additional syrup, a tablespoon at a time, until desired sweetness.

Watermelon Fruit Salad:

  1. Combine red onion and lime juice in a small bowl. Season with salt to taste; toss to coat. Let stand for 15 minutes.
  2. Meanwhile, combine the mangoes, watermelon, pineapple, honeydew, cilantro and jalapeno peppers in a large bowl. Drain onion mixture and discard lime juice. Add onion to salad.
  3. Pour 1/2 cup dressing over salad; toss to coat. Drizzle with additional dressing as desired. Save any leftover dressing for a different recipe. Gently stir in queso fresco. Let stand for 15 minutes before serving.

Recipe Tip

Avoid touching face when handling jalapeno peppers. Consider wearing gloves, as oils may burn skin.
