Nutty Pear and Blue Cheese Rustic Tart

The classic pairing of blue cheese, walnuts and pears is baked into a flaky pastry. Serve this tart after a special dinner or with brunch.

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Blue can be used in this recipe.

Instructions

  1. Heat oven to 350°F.
  2. Gently toss the pears, lemon zest and lemon juice in a large bowl.
  3. Combine the walnuts, brown sugar and flour in a bowl. Add blue cheese. Season with pepper to taste. Gently toss walnut mixture; set aside 1/4 cup mixture. Spoon the remaining mixture over pears; gently fold in, taking care not to break pear slices.
  4. Roll out pastry on a lightly floured surface to a 13-inch circle. Transfer to a parchment paper-lined baking sheet. Spoon pears mixture into the center of pastry to within 2 inches of edges. Fold pastry edges up over filling. (Center will be uncovered.)
  5. Bake for 30-35 minutes or until filling is bubbly and crust is golden brown. Sprinkle with reserved walnut mixture. Bake for 5-10 minutes longer or until walnuts begin to brown.
