Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Blue can be used in this recipe.

Instructions

Blue Cheese Dressing:

  1. Place the blue cheese, thyme and salt in a bowl. Blend with a fork, breaking cheese into small crumbles. Gently stir in the yogurt, buttermilk and apple cider vinegar. Season with pepper to taste.

Coleslaw:

  1. Place kale in a large bowl. Add 2 tablespoons dressing. Massage dressing into kale for 3-4 minutes or until kale is soft.
  2. Cut broccoli florets from bunches; save florets for a different recipe. Peel the outer layer of broccoli stems with a vegetable peeler. Thinly slice stems into strips with a mandoline slicer or knife. Thinly slice carrot into strips or julienne. Add broccoli and carrot strips to kale mixture. Toss with remaining dressing. Serve immediately.
