Key Lime Pie Ice Cream Sandwiches

Thanks to buttery mascarpone cheese, these homemade citrus-flavored ice cream sandwiches are extra creamy and delicious.

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Mascarpone can be used in this recipe.

Instructions

  1. Place the cream, mascarpone, sugar, lime zest and lime juice in blender or food processor; cover and process until mixture is smooth.
  2. Fill cylinder of ice cream maker two-thirds full. Freeze according to manufacturer’s directions. Refrigerate any remaining ice cream mixture until ready to freeze. Repeat freeze step with any remaining ice cream mixture.
  3. Meanwhile, line a 9 x 5-inch loaf pan with plastic wrap. Spread ice cream over bottom in an even layer. Cover with plastic wrap. Freeze for 6 hours or until firm.
  4. Unwrap ice cream. Transfer to a cutting board. Cut ice cream into 2-inch squares. Sandwich ice cream between two graham cracker squares. Freeze for at least 30 minutes before serving.

Recipe Tips

  • Fresh limes can be substituted for the Key limes in this recipe. Add 1/2 to 2 teaspoons lime zest, depending on taste.
  • Homemade or store-bought graham crackers could be used.
