Instructions

  1. Place pizza stone on lower rack in a cold oven. Heat oven to 400ºF. Bake stone for at least 30 minutes.
  2. Meanwhile, fry bacon in a large skillet over medium heat for 4-5 minutes or until fat is rendered; drain drippings. Add maple syrup; cook and stir for 3-5 minutes longer or until bacon is crisp. Transfer bacon to aluminum foil to cool; separate into pieces.
  3. Sprinkle 3/4 cup cheddar over flatbread to within 1/2 inch of edges. Top with apple and bacon. Sprinkle with remaining cheddar.
  4. Using a rimless baking sheet or pizza peel, carefully transfer flatbread to pizza stone. Bake for 12-15 minutes or until crust edges are golden brown and cheese is melted. Garnish with green onions.

Do you have questions when shopping for cheese? Ask the cheesemonger! A cheesemonger specializes in the buying and selling of high-quality cheese, usually available in the specialty section of a grocery store or cheese shop. Knowledgeable and passionate, a cheesemonger is a go-to resource for cheese varieties and pairings, proper cheese storage and handling, its cooking applications and cheese brand information.

Aged cheddar is crumbly and creamy with a rich, nutty flavor that becomes increasingly sharp and complex with age.
