  1. Sauté pineapple in olive oil in a large skillet over medium heat for 1-2 minutes or until just caramelized, flipping once. Remove pineapple from skillet with a slotted spoon. Sauté red bell pepper and onion in the same skillet over medium heat for 5-7 minutes or until tender. Remove from the heat. Season with salt and pepper to taste.
  2. Split Hawaiian rolls. Butter the outside of each roll half with a 1/2 teaspoon butter. Warm a large skillet over low heat. Add two roll bottoms to pan butter side down. Layer each with one pepper jack, ham and pineapple slice. Top each with about 1 tablespoon pepper-onion mixture and another pepper jack slice. Cover and cook for 1-3 minutes or until bottom is golden brown. (Watch carefully.)
  3. Top with roll tops butter side up. Flip sandwiches; cook, uncovered, 1-3 minutes longer, pressing gently with a spatula if necessary, or until bread is golden brown and cheese is melted. Repeat with remaining sandwiches. Serve immediately.

Cheesemonger Tip

Do you have questions when shopping for cheese? Ask the cheesemonger! A cheesemonger specializes in the buying and selling of high-quality cheese, usually available in the specialty section of a grocery store or cheese shop. Knowledgeable and passionate, a cheesemonger is a go-to resource for cheese varieties and pairings, proper cheese storage and handling, its cooking applications and cheese brand information.

Pepper jack is a blend of mild monterey jack cheese with, usually, green and red jalapeno peppers. The peppers give the cheese a spicy kick, and the level of heat varies by the brand.
