Instructions

  1. Sauté pineapple in olive oil in a large skillet over medium-high heat for 1-2 minutes or until just caramelized, turning once. Remove pineapple from the skillet with a slotted spoon.
  2. Add red bell pepper and onion; cook and stir over medium-high heat for 5-7 minutes or until tender. Remove from the heat. Season with salt and pepper to taste. Wipe out the pan.
  3. Spread a 1/2 teaspoon butter on the outside of each roll half. Warm the same pan over low heat. Add two roll bottoms butter side down. Layer each with the pepper jack, ham and pineapple slice. Top each with about 1 tablespoon pepper-onion mixture and remaining pepper jack. Cover and cook for 1-3 minutes or until bottom is golden brown. (Watch carefully.)
  4. Add roll tops butter side up. Flip sandwiches; cook, uncovered, 1-3 minutes longer or until cheese is melted. Repeat steps with remaining sandwiches.

Cheesemonger Tip

Select for cheesemonger info

Do you have questions when shopping for cheese? Ask the cheesemonger! A cheesemonger specializes in the buying and selling of high-quality cheese, usually available in the specialty section of a grocery store or cheese shop. Knowledgeable and passionate, a cheesemonger is a go-to resource for cheese varieties and pairings, proper cheese storage and handling, its cooking applications and cheese brand information.

Pepper jack is a blend of mild monterey jack cheese with, usually, green and red jalapeno peppers. The peppers give the cheese a spicy kick.
