Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Cream Cheese or Ricotta can be used in this recipe.

Instructions

Whipped Herb Ricotta Spread:

  1. Place the ricotta, cream cheese, lemon zest, capers and 1 teaspoon olive oil in a food processor; cover and process until smooth. Season with salt and pepper to taste. Pulse to combine. Thin mixture with remaining olive oil if desired. Stir in chives, dill and parsley. 

Wraps:

  1. Spread herbed ricotta on tortillas to within 1 inch of edges; layer with lettuce, salmon, cucumber, tomato and red onion. Roll up tightly.
