Corn-Tomato Salsa:



Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Queso Menonita can be used in this recipe.


Corn-Tomato Salsa:

  1. Combine the salsa ingredients in a large bowl. Set aside. 


  1. Warm olive oil in large skillet over medium heat. Add mushrooms and onion; cook and stir for 6-8 minutes or until tender. Add garlic and cumin; cook and stir for 1 minute longer. 
  2. Reduce heat to low. Sprinkle with queso menonita; cook and stir just until melted. Remove from the heat. Drizzle with truffle oil if desired. Season with salt and pepper to taste. Keep warm.
  3. Warm tortillas according to package directions. Top tortillas with mushroom mixture and reserved salsa. Serve immediately.

Recipe Tip

  • Any Wisconsin melting cheese, such as asadero, monterey jack or muenster, can be substituted for the queso menonita cheese.
