  1. Combine the flour, salt and pepper in a large bowl. Cut in butter until crumbly. Fold in blue cheese. Whisk egg and cream in a separate bowl. Add to flour mixture; gently fold in until just combined.
  2. Transfer dough to plastic wrap; shape with wrap into a disk. Wrap in plastic wrap. Refrigerate for at least 4 hours or until firm.
  3. Heat oven to 350°F. Roll out dough on a lightly-floured surface to 1/4-inch thick. Cut with a floured 2-inch round cookie cutter. Place 1 inch apart on parchment-lined baking sheets. Press an indentation in center of each with your thumb.
  4. Bake for 18-20 minutes or until edges are golden brown. Remove from pan to a wire rack. Fill each with 1/2 teaspoon jam. Cool completely.

Cheesemonger Tip

Select for cheesemonger info

Do you have questions when shopping for cheese? Ask the cheesemonger! A cheesemonger specializes in the buying and selling of high-quality cheese, usually available in the specialty section of a grocery store or cheese shop. Knowledgeable and passionate, a cheesemonger is a go-to resource for cheese varieties and pairings, proper cheese storage and handling, its cooking applications and cheese brand information.

Have a wedge of blue cheese? It's easy to make crumbles. Place the wedge into the freezer for about 30 minutes; then crumble with a knife. For best results, keep the cheese cold for easier handling.
