Instructions

  1. Combine the flour, salt and pepper in a large bowl. Cut in cold butter until crumbly. Toss in blue cheese. Whisk egg and cream in another bowl. Add to flour mixture; gently stir in just until combined.
  2. Transfer dough to plastic wrap; shape with wrap into a disk. Wrap in plastic wrap. Refrigerate for at least 4 hours or until firm.
  3. Heat oven to 350°F. Roll out dough on a lightly floured surface to 1/4-inch thick. Cut with a floured 2-inch round cookie cutter. Place 1 inch apart on parchment-lined baking sheets. Press an indentation into the center of each with your thumb.
  4. Bake for 18-20 minutes or until edges are golden brown. Remove from the pans to cool. Fill each with 1/2 teaspoon jam. Cool completely.
