Asiago Gnocchi Bake with Mushrooms and Bacon

Ingredients List


  1. Heat oven to 350ºF.
  2. Cook gnocchi according to package directions; drain. Meanwhile, fry bacon in a large, nonstick or cast-iron skillet over medium heat until crisp. Remove with a slotted spoon to paper towel to drain. When cool enought to handle, crumble bacon. Set aside.
  3. Cook and stir mushrooms in bacon drippings in the same pan over medium heat until tender, about 5 minutes. Season with salt. Reduce heat to low; add the gnocchi, reserved bacon, milk and 3/4 cup asiago. Cook and stir until the cheese is melted.  
  4. Sprinkle with remaining asiago; cover and remove from heat. Let stand 3-4 minutes or until cheese is melted. Garnish with parsley and thyme if desired.

  • Any brand of Wisconsin asiago cheese can be used.
