Instructions

  1. Heat oven to 400°F.
  2. Bring the cranberries, apple, orange juice, brown sugar, cinnamon and salt to a boil in a saucepan over medium heat. Reduce heat to medium-low; simmer, uncovered, for 12-17 minutes or until cranberries pop and apple is just tender, stirring occasionally. Remove from the heat.
  3. Unroll puff pastry on a parchment-lined baking sheet. Place fontina in center; top with cranberry mixture. Fold pastry edges up over filling. (Center will be uncovered.) Whisk egg and water; brush over pastry.
  4. Bake for 26-32 minutes or until pastry is golden brown. Cool slightly. Serve with baguette, apple and pear slices.

Cheesemonger Tip

Do you have questions when shopping for cheese? Ask the cheesemonger! A cheesemonger specializes in the buying and selling of high-quality cheese, usually available in the specialty section of a grocery store or cheese shop. Knowledgeable and passionate, a cheesemonger is a go-to resource for cheese varieties and pairings, proper cheese storage and handling, its cooking applications and cheese brand information.

Both an excellent table and cooking cheese, fontina is considered one of the most versatile cheeses in the world. It has a slightly tart, nutty flavor and melts to a delicious filling in the pastry.
