  1. Heat oven to 350°F. Line a 15 x 10-inch baking pan with parchment paper.
  2. Cook sausage in a large skillet over medium heat until meat is no longer pink; drain.
  3. Roll out biscuits on a lightly floured surface, each about 6-inches long x 3-inches wide. Sprinkle with fontina, spinach and sausage. Starting at a short end, tightly roll up dough. Pinch seam to seal.
  4. Using a serrated knife, cut each roll into 1-inch pinwheels. Place slices cut side down on prepared pan.
  5. Bake for 25-30 minutes or until pinwheels are golden brown and cheese is melted.

Do you have questions when shopping for cheese? Ask the cheesemonger! A cheesemonger specializes in the buying and selling of high-quality cheese, usually available in the specialty section of a grocery store or cheese shop. Knowledgeable and passionate, a cheesemonger is a go-to resource for cheese varieties and pairings, proper cheese storage and handling, its cooking applications and cheese brand information.

Both an excellent table and cooking cheese, fontina is considered one of the most versatile cheeses in the world. Wisconsin cheesemakers produce Swedish-style, Italian-style and Danish-style fontina.
