Cheese

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Cheese Curds can be used in this recipe.

Instructions

Corn Relish:

  1. Bring water to a boil in a Dutch oven. Carefully add corn; cook for 3-4 minutes or until crisp-tender. Remove and immediately place corn into a bowl of ice water. Drain and pat dry. Cut kernels from the cob.
  2. Combine the cheese curds, green onions, red onion, cilantro and corn in a bowl.
  3. Whisk the red wine vinegar, lime juice and honey in a small bowl. Slowly whisk in olive oil. Season with salt and pepper to taste. Drizzle over corn mixture; toss to coat.

Burgers:

  1. Grease grill grate. Heat grill to medium. 
  2. Combine hot pepper sauce and salt in a large bowl. Crumble pork and chorizo over mixture; mix just until combined. Form into four patties, 1/3 pound each. Season with salt and pepper.
  3. Grill burgers, covered, over medium heat for 5-8 minutes on each side or until a thermometer inserted into patties reads 160°F. 
  4. Spread mayonnaise on bun bottoms; top with burgers and relish. Replace bun tops. Serve with additional relish.

Recipe Tip

The relish could be prepared up to a day in advance. Combine ingredients, except for the green onions and cilantro; cover and refrigerate. Stir in green onions and cilantro just before serving.
