Three-Cheese Wisconsin Mac and Cheese

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Aged Cheddar, Alpine-Style or Asiago can be used in this recipe.


  1. Cook macaroni according to package directions; drain. 
  2. Meanwhile, melt butter in a Dutch oven over medium-low heat. Whisk in flour until light brown. Gradually whisk in milk. Bring to a boil; cook and whisk for 2 minutes or until thickened.
  3. Reduce heat to low; gradually whisk in the alpine-style, cheddar and asiago until melted. Add macaroni; heat through, stirring constantly. 
  4. Remove from the heat. Season with salt and pepper to taste. Garnish with parsley and red pepper flakes if desired.
