Three-Cheese Wisconsin Mac and Cheese

Ingredients

1 package (16 ounces) uncooked elbow macaroni
6 tablespoons butter, cubed
1/2 cup all-purpose flour
5 cups milk
4 ounces Roth Grand Cru® cheese, shredded (1 cup)
4 ounces Henning Sharp White Cheddar cheese, shredded (1 cup)
1 1/2 ounces Sartori Classic Asiago cheese, shredded (1/2 cup)
Salt and pepper to taste
Fresh parsley and crushed red pepper flakes, optional

Cheese

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Aged Cheddar, Alpine-Style or Asiago can be used in this recipe.

Instructions

Cook macaroni according to package directions; drain. Keep warm.
Meanwhile, melt butter in a Dutch oven over medium-low heat. Stir in flour until light brown. Gradually stir in milk. Bring to a boil; cook and stir for 2-3 minutes or until thickened.
Remove from the heat. Gradually stir in the alpine-style, cheddar and asiago until melted. Stir in macaroni. Season with salt and pepper to taste. Garnish with parsley and red pepper flakes if desired.
