Wisconsin aged cheddar, smoked gouda and sweet barbecue sauce give this mac and cheese all the smoky flavor of a summer spent around the grill. It's also a great way to use up your leftover chicken.


  1. Cook pasta according to package directions; drain. Meanwhile, sauté the jalapeño and onion in butter in a Dutch over medium heat until tender. Reduce heat to medium-low. Whisk in flour until combined. Gradually whisk in milk, salt and liquid smoke if desired. Bring to a boil; cook and whisk for 2 minutes or until thickened. Reduce heat to low; gradually stir in cheddar and gouda until melted. Stir in pasta, chicken, barbecue sauce and cayenne pepper; heat through.
  2. Garnish with green onions, cilantro and additional barbecue sauce.
