Sriracha Macaroni and Cheese

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Cheddar or Colby-Monterey Jack can be used in this recipe.


  1. Cook pasta according to package directions; drain. Meanwhile, melt 3 tablespoons butter in heavy, large oven-proof skillet over medium-low heat. Whisk in flour until smooth. Gradually whisk in milk and vegetable broth. Bring to a boil; cook and whisk for 2 minutes or until thickened. Reduce heat to low; gradually stir in cheddar and colby-monterey jack until melted. Add pasta, Sriracha sauce to taste and half of the green onions; heat through, stirring constantly. Season with salt and pepper to taste. Remove from the heat.
  2. Melt remaining butter in a small bowl. Add bread crumbs; toss to coat. Sprinkle bread crumbs over pasta mixture. Broil on high until crumbs are golden brown (watch closely), about 1-2 minutes. Garnish with remaining green onions.
