Almond-Orange and Blue Cheese Bites

Instructions

  1. Bring sugar and water to a boil in a Dutch oven or large saucepan over medium heat, stirring constantly. Reduce heat; add clementine slices. Simmer, uncovered, for 1 hour, turning occasionally.
  2. Transfer clementine slices to a wire rack. Let stand for at least 1 hour or overnight.
  3. Spread blue cheese on cookies; top with clementine slices.
