Baked Eggs with Spicy Tomato Sauce

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Alpine-Style or Grand Cru® can be used in this recipe.

Instructions

  1. Heat oven to 400°F.
  2. Slice each bread portion in half lengthwise; place cut side up on an ungreased baking sheet. Brush with olive oil. Bake for 5-6 minutes or until golden brown. When cool enough to handle, slice bread into serving-size pieces. Reduce oven temperature to 375˚F.
  3. Cook sausage and onions in a large ovenproof skillet over medium heat until meat is no longer pink; drain. Add garlic; cook and stir for 1 minute. Stir in the tomatoes, harissa paste, oregano and salt; bring to a gentle boil, stirring constantly. Reduce heat; simmer, uncovered, until slightly thickened, stirring occasionally.
  4. Carefully crack eggs into sauce, leaving a space between each. Sprinkle with Grand Cru® and pepper.
  5. Bake for 7-9 minutes or until egg whites and yolks are firm. Garnish with oregano. Serve in bowls with bread.

Recipe Tips

Roth Grand Cru® or Roth Grand Cru® Surchoix could be substituted for Roth Grand Cru® Reserve cheese.| Harissa is a smoky-spicy, North African, hot chili pepper paste, and it usually contains seasonings such as cumin, coriander and caraway seeds.
