Cheese

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Gouda can be used in this recipe.

Instructions

  1. Combine the potatoes, gouda, eggs and flour in a large bowl. Bake batter (about 1 cup) in a waffle iron, according to the manufacturer’s directions for greasing and cooking, for 4-6 minutes or until golden brown.
  2. Top waffles with black beans, salsa, guacamole, fried eggs and additional gouda.

Recipe Tip

  • The waffle batter should be thick and spreadable; the amount of cream or milk and butter included in the mashed potato recipe determines its consistency. If the batter is too dry, add an additional egg. If it is too wet, add flour (1 tablespoon at a time) until desired consistency.

Cheesemonger Tip

Do you have questions when shopping for cheese? Ask the cheesemonger! A cheesemonger specializes in the buying and selling of high-quality cheese, usually available in the specialty section of a grocery store or cheese shop. Knowledgeable and passionate, a cheesemonger is a go-to resource for cheese varieties and pairings, proper cheese storage and handling, its cooking applications and cheese brand information.

Marieke® Gouda is an artisan cheese created with an authentic, Old-World Gouda recipe, and it stars fresh milk from their family’s dairy.
