  1. Beat the butter, havarti, lemon zest and dill in a bowl. Season with salt and pepper to taste.
  2. Shape havarti mixture into an 8-inch long, round roll; tightly wrap with plastic wrap. Refrigerate for at least 2 hours. Serve butter with seafood.
