  1. Bring cauliflower and milk just to a boil in a large saucepan, covered, over medium-high heat. Reduce heat; simmer, covered, for 10-12 minutes or until tender, stirring occasionally. Cool slightly.
  2. Transfer cauliflower mixture to a food processor. Add Crescenza-Stracchino™ and parmesan; cover and process until mixture is smooth. Season with salt and pepper to taste.

Recipe Tip

  • Wisconsin cream cheese or garlic and herb cold pack cheese spread could be substituted for the LaBottega di BelGioioso Crescenza-Stracchino™ cheese.

Cheesemonger Tip

Select for cheesemonger info

Do you have questions when shopping for cheese? Ask the cheesemonger! A cheesemonger specializes in the buying and selling of high-quality cheese, usually available in the specialty section of a grocery store or cheese shop. Knowledgeable and passionate, a cheesemonger is a go-to resource for cheese varieties and pairings, proper cheese storage and handling, its cooking applications and cheese brand information.

Both cheeses have won awards. The Crescenza-Stracchino™ cheese is a rindless, fresh cheese with a milky flavor. When aged, it develops a pleasant tanginess and softness. Eau Galle Cheese Factory was also highlighted on the “Today Show” on NBC for their parmesan.
