Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Crescenza/Stracchino or Parmesan can be used in this recipe.

Instructions

  1. Bring cauliflower and milk just to a boil in a large saucepan over medium-high heat. Reduce heat; simmer, covered, for 10-12 minutes or until tender, stirring occasionally. Cool slightly.
  2. Transfer cauliflower mixture to a food processor. Add Crescenza-Stracchino™ and parmesan; cover and process until mixture is smooth. Season with salt and pepper to taste.

Recipe Tip

Wisconsin cream cheese or garlic and herb cold pack cheese spread could be substituted for the LaBottega di BelGioioso Crescenza-Stracchino™ cheese.
