Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Fontina, Mozzarella or Parmesan can be used in this recipe.

Instructions

  1. Heat oven to 450°F.
  2. Melt butter in a large, heavy skillet or Dutch oven over medium-high heat. Add onions; cook for 10 minutes, stirring frequently. Reduce heat to medium-low. Cook for 20-25 minutes longer or until onions are golden brown, stirring occasionally. Remove onions from the skillet. Cool completely. Wipe out the pan.
  3. Cook sausage in the same pan over medium heat until meat is no longer pink; drain. Set aside.
  4. Roll out and stretch pizza dough on a lightly floured surface to a 12-inch circle. Press dough on the bottom and about 1 inch up sides of a greased 10-inch springform pan.
  5. Spread pizza sauce on dough. Sprinkle with fontina. Top with the onions, reserved sausage, red peppers, mozzarella and parmesan.
  6. Bake for 25-30 minutes or until crust is golden brown and cheese is bubbly. Cool slightly before serving.

Cheesemonger Tip

Select for cheesemonger info

Do you have questions when shopping for cheese? Ask the cheesemonger! A cheesemonger specializes in the buying and selling of high-quality cheese, usually available in the specialty section of a grocery store or cheese shop. Knowledgeable and passionate, a cheesemonger is a go-to resource for cheese varieties and pairings, proper cheese storage and handling, its cooking applications and cheese brand information.

Topping pizza with whole milk or part-skim mozzarella is equally delicious. The differences? Whole-milk mozzarella melts quickly and flows with little browning; and the part-skim cheese melts well, flows less and browns faster.
