Spicy Southwest Crustless Quiche

Ingredients

8 large eggs
3/4 cup heavy whipping cream
3/4 cup milk
1/2 teaspoon each salt and pepper
12 ounces bulk pork sausage, cooked and drained
6 ounces Springside Jalapeno Jack cheese (pepper jack), shredded (1 1/2 cups)
1/2 cup chopped green pepper
1 medium jalapeno pepper, seeded and sliced

Cheese

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Monterey Jack can be used in this recipe.

Instructions

Heat oven to 350°F.
Whisk the eggs, cream, milk, salt and pepper in a large bowl. Stir in the sausage, pepper jack and bell pepper.
Pour into a greased 9-inch deep-dish pie plate. Top with jalapeno pepper.
Bake for 40-45 minutes or until center is set and a knife inserted near the center comes out clean. Let stand for 10 minutes before serving.

Recipe Tip

Avoid touching face when handling jalapeno peppers. Consider wearing gloves, as oils may burn skin.

Love spicy foods? If so, pepper jack is crafted by blending buttery, mild monterey jack cheese with red and green jalapeno peppers. The amount of spicy heat in the cheese varies by brand.
