Instructions

  1. Beat lemon curd and honey in a large bowl until blended. Beat in cream. Add mascarpone; beat just until thickened. (Do not overbeat.)
  2. Spoon 2 tablespoons gingersnap crumbs into each parfait glass. Layer with mascarpone cream and strawberries; repeat layers starting with crumbs. Refrigerate for at least 2 hours before serving.
