Instructions

Chocolate Cake:

  1. Heat oven to 350°F. Grease and flour the bottoms and sides of two 8-inch round baking pans.
  2. Beat the cake mix, pudding mix, eggs, sour cream, beer and butter in a large bowl until smooth.
  3. Pour batter into prepared pans. Bake for 34-38 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes in pans before removing to wire racks to cool completely.

Irish Cream Frosting:

  1. Cream the butter, mascarpone and 1 cup confectioners’ sugar in a large bowl until light and fluffy. Gradually add remaining confectioners’ sugar, beating each addition until combined. Beat in Irish cream.
  2. Place one cake layer on a serving platter. Spread heaping 1 1/2 cups frosting on layer. Top with remaining cake layer. Spread 1/2 cup frosting on layer. Using a bench scraper or thin spatula, spread frosting in a thin layer over sides of cake. Pipe remaining frosting on top of cake. Garnish cake with chocolate curls.
