Instructions

  1. Combine flour and salt in a bowl. Beat butter and mascarpone in a large bowl until light and fluffy. Gradually add flour mixture; beat until combined.
  2. Shape dough into a disk; wrap in plastic wrap. Refrigerate for at least 2 hours.
  3. Heat oven to 350°F.
  4. Roll out dough on a lightly floured surface to a 15 x 10-inch rectangle, about 1/8-inch thick. Cut into twenty-four 2 1/2-inch squares. Place 1 inch apart on parchment-lined baking sheets.
  5. Place heaping 1/2 teaspoon apricot preserves into the center of half of the squares. Repeat step with strawberry preserves. Fold opposite corners of dough over preserves; pinch tightly at center to seal.
  6. Bake for 15-18 minutes or until golden brown. Let stand for 5 minutes before removing to wire racks to cool completely. Dust with confectioners’ sugar.
