Instructions

  1. Heat oven to 425°F. Line a 15 x 10-inch baking pan with parchment paper.
  2. Combine the flour, sugar, baking powder and salt in a large bowl. Cut in cold butter until mixture resembles pea-sized crumbs.
  3. Toss in the Pleasant Ridge Reserve, prosciutto and green onions. Whisk 3/4 cup cream and egg in a small bowl; add to flour mixture just until moistened and a dough forms.
  4. Turn dough onto a lightly floured surface; knead just to combine. Shape dough into an 8-inch circle, about 3/4-inch thick. Cut into eight wedges.
  5. Transfer wedges to prepared pan. Cover with plastic wrap. Refrigerate for 30 minutes. Brush dough with remaining cream.
  6. Bake for 22-24 minutes or until golden brown. Serve warm with butter.

Cheesemonger Tip

Select for cheesemonger info

Do you have questions when shopping for cheese? Ask the cheesemonger! A cheesemonger specializes in the buying and selling of high-quality cheese, usually available in the specialty section of a grocery store or cheese shop. Knowledgeable and passionate, a cheesemonger is a go-to resource for cheese varieties and pairings, proper cheese storage and handling, its cooking applications and cheese brand information.

Uplands Pleasant Ridge Reserve is the most awarded cheese in American history. Rich and salty with a long, fruity finish—this washed-rind, alpine-style cheese is made only in summer with grass-fed milk and aged for up to two years.
