Instructions

  1. Toss zucchini with salt in a large bowl. Let stand for 10 minutes. Place zucchini in a cheesecloth or clean kitchen towel; twist to squeeze dry. Return zucchini to the same bowl. Stir in the 1 cup cheddar, corn, cornmeal, flour, garlic, dill and lemon zest.
  2. Whisk buttermilk and egg in another bowl. Stir into zucchini mixture. Season with salt and pepper.
  3. Warm olive oil in a large skillet over medium heat. Drop batter by 1/4 cupfuls into skillet; gently press to flatten slightly. Cook for 3-4 minutes on each side or until golden brown. Top fritters with remaining cheddar; cover and cook for 1-2 minutes longer or until cheese is melted.
  4. Serve warm fritters with toppings.

Do you have questions when shopping for cheese? Ask the cheesemonger! A cheesemonger specializes in the buying and selling of high-quality cheese, usually available in the specialty section of a grocery store or cheese shop. Knowledgeable and passionate, a cheesemonger is a go-to resource for cheese varieties and pairings, proper cheese storage and handling, its cooking applications and cheese brand information.

Cedar Grove Cheese began making cheese in 1878. Today, they craft organic and traditional artisan cheeses like garlic & dill cheddar, mixed milk specialties and famous cheese curds. The company is known for their environmental stewardship and quality, innovative cheeses made the old-fashioned way.
