Instructions

  1. Heat oven to 375°F.
  2. Melt 2 tablespoons butter in a Dutch oven over medium heat. Add mushrooms and onion; cook and stir for 6-8 minutes or until vegetables are tender. Transfer vegetables to a bowl. Wipe out the pan.
  3. Melt 4 tablespoons butter in the same pan over medium-low heat. Whisk in flour until smooth. Gradually whisk in milk and garlic powder. Bring to a boil; cook and whisk for 2 minutes or until thickened.
  4. Reduce heat to low. Gradually whisk in 1 cup Red Rock until melted. Stir in vegetables. Remove from the heat. Season with salt and pepper to taste. Spoon vegetable mixture into a greased 2-quart baking dish.
  5. Melt remaining butter; toss with cracker crumbs and almonds. Sprinkle crumb mixture and remaining Red Rock over top. Bake for 10-15 minutes or until topping is golden brown.

Frozen-cut green beans and carrots could be used in this recipe. Thaw vegetables before adding them to the dish.
