Lemon Glaze:

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin BellaVitano® or Parmesan can be used in this recipe.

Instructions

  1. Heat oven to 350°F. Grease and flour a 10-inch (about 12 cups) fluted tube pan.
  2. Combine sugar and lemon zest in a large bowl. Add eggs, one at a time, beating each until well combined. While beating, slowly drizzle in olive oil until blended.
  3. Whisk the milk, lemon juice and vanilla in a bowl. Combine the flour, baking powder, salt and baking soda in another large bowl; gradually add to olive oil mixture alternately with milk mixture, beating each addition until combined. Fold in Raspberry Ale BellaVitano®.
  4. Pour batter into prepared pan. Bake for 45-55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes in pan before removing to a wire rack to cool completely.

Lemon Glaze:

  1. Combine confectioners’ sugar and lemon juice in a bowl until smooth. Drizzle glaze over the cake.
  2. Serve cake with raspberries and additional Raspberry Ale BellaVitano®.
