Instructions

Homemade Miso Sauce:

  1. Whisk the miso paste, sesame oil, chili garlic sauce, peanut butter, sugar, rice vinegar, soy sauce, garlic and ginger in a bowl.

Skillet:

  1. Thinly slice zucchini into julienned strips with a mandoline slicer or vegetable peeler.
  2. Cook rice noodles according to package directions until al dente. Drain, reserving 1/2 cup hot pasta water.
  3. Melt butter in a large skillet over medium heat. Add the shrimp, red bell pepper and carrot; cook and stir for 4-5 minutes or until shrimp turn pink. Toss in zucchini and rice noodles. Add miso sauce; toss to coat. Add reserved pasta water, a tablespoon at a time, until desired consistency.
  4. Remove from the heat. Toss in mango jack. Sprinkle with green onions and sesame seeds.
