Instructions

  1. Combine the water, white vinegar, sugar and salt in a large saucepan over medium-high heat. Bring to a boil, stirring constantly. Reduce heat to medium. Simmer, uncovered, for 2-3 minutes or until sugar is dissolved, stirring frequently. Remove from the heat. Cool for 30 minutes.
  2. Toss the asiago, cucumber, red onion, red bell pepper and jalapeno peppers in a large bowl.
  3. Carefully pour vinegar mixture over vegetables; stir to combine. Cover and refrigerate for at least 4 hours before serving. Enjoy the pickled veggie-asiago mixture within 7 days.
  4. Serve with corn chips.
