Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Aged Cheddar or Young Cheddar can be used in this recipe.

Instructions

  1. Melt butter in a Dutch oven over medium heat. Add onion and jalapeno pepper; cook and stir for 4-6 minutes or until crisp-tender. Add garlic; cook and stir for 1 minute.
  2. Reduce heat to medium-low. Gradually stir in chicken broth. Add the beans, cumin, oregano and chipotle chili pepper. Bring to a boil, stirring frequently. Reduce heat to low. Simmer, uncovered, for 20 minutes, stirring occasionally.
  3. Stir in chicken and corn; heat through. Stir in cream; heat through. (Do not boil.) Remove from the heat. Gradually stir in 2 cups cheddar until melted. Stir in the sour cream, cilantro and lime juice. Season with salt and pepper to taste.
  4. Ladle chili into serving bowls. Garnish with toppings as desired and remaining cheddar.
