Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin BellaVitano® or Parmesan can be used in this recipe.

Instructions

  1. Combine pepper and salt in a small bowl; rub over steaks. Let stand for 30 minutes.
  2. Warm olive oil in a large, heavy skillet over medium-high heat. Add steaks; cook for 2-3 minutes on each side or until browned.
  3. Reduce heat to medium-low. Add the butter, thyme and garlic; cook and stir until butter is melted. Baste steaks with butter sauce for 2-3 minutes or until a thermometer inserted into meat reads 145°F. Transfer steaks to a cutting board; tent with aluminum foil. Let rest for 10 minutes. Thinly slice steak against the grain.

Cheese Sauce:

  1. Remove and discard thyme. Melt butter in the same pan over medium-low heat. Add the shallot, garlic and pepper; cook and stir for 2-3 minutes or until shallot is crisp-tender. Add cognac. Bring to a boil, stirring to loosen any browned bits from bottom of pan.
  2. Reduce heat to medium-low. Gradually whisk in beef stock and cream. Bring sauce just to a boil, whisking constantly. Cook and whisk for 3-4 minutes longer or until sauce is thickened.
  3. Remove from the heat. Stir in 3/4 cup Black Pepper BellaVitano® until melted. Keep warm.
  4. Cook french fries according to package directions. Toss with the parsley, salt and remaining Black Pepper BellaVitano®.
  5. Serve sauce with french fries and steaks.
