Instructions

  1. Cream butter and sugar in a large bowl until light and fluffy. Combine the flour, basil and salt in another large bowl; gradually add to butter mixture just until combined.
  2. Shape dough into a disk; wrap in plastic wrap. Refrigerate for at least 2 hours.
  3. Heat oven to 350°F.
  4. Roll out dough on a floured surface to 1/4-inch thick. Cut with a floured 2-inch scalloped round cookie cutter. Place rounds 1 inch apart on parchment-lined baking sheets.
  5. Bake for 12-14 minutes or until golden brown. Cool for 5 minutes before removing to wire racks to cool completely.

Dessert Cheese Pairings:

  1. Place gouda and fontina on the cookies. Top gouda with honeycomb and honey. Top fontina with chocolate sauce. Garnish with orange zest and basil.
