Instructions

  1. Heat oven to 350°F.
  2. Melt butter in a large saucepan over medium-low heat. Whisk in flour until light brown. Gradually whisk in the milk, salt, pepper, garlic powder and cayenne pepper. Bring to a boil, whisking constantly. Cook and whisk for 2-3 minutes or until thickened.
  3. Reduce heat to low. Gradually whisk in goudas until melted. Stir in corn and bacon. Remove from the heat. Season with salt and pepper. Transfer corn mixture to a greased 2-quart baking dish.
  4. Bake, covered, for 25 minutes. Uncover; bake for 14-16 minutes longer or until bubbly. Cool slightly. Sprinkle with green onions and additional bacon. Serve warm with tortilla chips.
