Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Bread Cheese (Juustoleipa) can be used in this recipe.

Instructions

  1. Bring the maple syrup, orange zest, orange juice and rosemary to a boil in a saucepan over medium-high heat, stirring constantly. Cook and stir for 2-5 minutes or until glaze is reduced by half. Remove from the heat. Stir in red pepper flakes.
  2. Grease grill grate. Heat grill to medium.
  3. Place juustoleipa on a grill grid. Brush with glaze. Grill juustoleipa, covered, over medium heat for 2-3 minutes on each side or until warmed through, brushing with glaze after flipping. Transfer juustoleipa to a cutting board; cut into 1-inch wedges.
  4. Top wedges with berries and rosemary. Drizzle with remaining glaze.

Cheesemonger Tip

Do you have questions when shopping for cheese? Ask the cheesemonger! A cheesemonger specializes in the buying and selling of high-quality cheese, usually available in the specialty section of a grocery store or cheese shop. Knowledgeable and passionate, a cheesemonger is a go-to resource for cheese varieties and pairings, proper cheese storage and handling, its cooking applications and cheese brand information.

The Original Golden Baked Bliss lives up to its name. This buttery cheese—known as bread cheese and juustoleipa in Wisconsin—has a signature golden crust and softens to delicious bliss when warmed on the grill or in a skillet, but never melts. Serve it cut into wedges or strips for snacking. The cheese pairs beautifully with the recipe’s maple glaze, fruity jams, and savory sauces like pesto and marinara.
