Instructions

  1. Combine the red onion, champagne vinegar and sugar in a bowl. Let stand 10 minutes. Whisk in the sour cream, dill and garlic. Lightly season with salt and pepper.
  2. Combine the cucumber, tomatoes, havarti and capers in a large bowl. Add dressing; toss to coat.
  3. Grease grill grate. Heat grill to medium.
  4. Brush salmon with olive oil; season with salt and pepper. Place salmon, skin side down, on grill grate. Grill salmon, covered, over medium heat for 10-12 minutes or until fish flakes easily. Transfer salmon to a cutting board; remove skin.
  5. Serve salmon with cucumber salad.
