Instructions

Brownies:

  1. Line a greased 9-inch square baking pan with parchment paper, allowing excess paper to hang over sides. Grease paper.
  2. Prepare brownie mix according to package directions; add egg(s), and substitute milk for water and melted butter for oil. Stir in dark chocolate. Pour batter into prepared pan.

Cherry Cheddar Cream Layer:

  1. Place the cream cheese, cheddar and sugar into a food processor; cover and process until mixture is smooth. Add egg; cover and pulse just until combined. Add cherries; cover and pulse until chopped.
  2. Drop tablespoonfuls of cheese mixture over the top of the batter. Swirl batter with a toothpick or knife. Bake brownies according to package directions. Cool completely on a wire rack.

Cherry Compote:

  1. Combine cherries and sugar in a saucepan over medium heat. Cook and stir for 4-6 minutes or until cherries begin to soften and sugar is dissolved. Combine cornstarch and kirsch in a small bowl until smooth; stir into cherry mixture. Bring to a boil, stirring constantly. Cook and stir for 1-2 minutes or until slightly thickened. Remove from the heat.
  2. Cut brownies into rectangles. Garnish with compote, whipped cream, cheddar and chocolate curls.

Cheesemonger Tip

Do you have questions when shopping for cheese? Ask the cheesemonger! A cheesemonger specializes in the buying and selling of high-quality cheese, usually available in the specialty section of a grocery store or cheese shop. Knowledgeable and passionate, a cheesemonger is a go-to resource for cheese varieties and pairings, proper cheese storage and handling, its cooking applications and cheese brand information.

Renard’s Cherry Cheddar is a delightful specialty that blends cheddar’s savory and tangy notes with vibrant, sweet-tart Door County cherries! Pair this cheddar cheese with a fruit-forward wine, like pinot noir or rosé of sangiovese. Serve it with fruits, preserves and crackers on a cheese board, or melt it in your favorite recipes.
