Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Aged Cheddar or Young Cheddar can be used in this recipe.

Instructions

  1. Combine the mayonnaise, Dijon mustard, milk and lemon zest in a bowl; season with salt and pepper. Toss arugula with 1/4 cup mayonnaise mixture in a large bowl. Cover and refrigerate remaining mayonnaise mixture for serving.
  2. Place one tortilla into a large skillet over medium heat. Layer with half of the cheddar, turkey, stuffing, arugula mixture, parsley and green onions. Top with a tortilla.
  3. Cook for 2-3 minutes on each side or until cheese is melted. Transfer quesadilla to a cutting board. Cut into wedges. Repeat step with remaining ingredients.
  4. Serve with cranberry sauce and reserved mayonnaise mixture.
